Cooking Ingredients for Citrus-Crusted Yellowfin Tuna Recipe

3 tb Finely chopped jalapeno
2 tb Finely chopped ginger
1 tb Chopped garlic
3 tb Lime zest
3 tb Lime juice
1 tb Coarse salt
1 tb Crushed black peppercorns
2 tb Sugar
1 c Dry white wine
4 Tuna steaks; 1-1/2 inches
-thick
; (6 oz.)
2 tb Olive oil

Citrus-Crusted Yellowfin Tuna Preparation

1. To prepare the crust: In a small saucepot combine the jalapeno, ginger, garlic, lime zest and juice, salt, peppercorns, sugar, and white wine. Simmer the mixture for 5 minutes on medium heat. Most of the liquid will be absorbed. Remove from the heat and cool. 2. To prepare the tuna: Pack the crust mixture onto the tuna steaks. Let them absorb some of the flavors for 20 minutes at room temperature before cooking. Preheat a heavy pan very hot for 5 minutes.
