Cooking Ingredients for Citruss Sponge Pudding Recipe
1 c Caster sugar
1/2 c Self-raising flour
3 tb Desiccated coconut
1 tb Finely grated lemon rind
1 tb Finely grated orange rind
2 tb Lemon juice
2 tb Orange juice
2 Eggs; separated
125 g Butter; melted & cooled
1 c Milk
Citruss Sponge Pudding Preparation
1. Place sugar, flour, coconut, lemon rind and orange rind in a bowl and mix to combine. 2. Beat in lemon juice, orange juice, egg yolks, butter and milk. Place egg whites in a bowl and beat until stiff. 3. Fold egg whites into citrus mixture and pour into a greased 1 – litre capacity ovenproof dish. Place in a baking dish, with enough hot water to come halfway up the sides of the dish. Bake in a moderate oven (180C) for 45 minutes or until cooked.
