Cooking Ingredients for Continental Frittata Recipe

2 tb Olive oil
1 113 gram pac pepperoni
-sausage; (4oz)
125 g Mushrooms; (4oz)
1/2 bn Salad onions; finely chopped
6 Eggs; (large)
125 g Mature Cheddar cheese;
-grated (4oz)
Salt and freshly ground
-black pepper
2 tb Freshly chopped parsley

Continental Frittata Preparation

Heat the oil in a heavy frying pan and saute the pepperoni, mushrooms and onion for 2-3 minutes, stirring occasionally. Crack the eggs into a jug and beat together with the cheese, parsley and seasoning to taste. Pour the egg mixture into the pan and cook over a moderate heat for 5-6 minutes until the underside is golden. Place the pan under a hot grill for a further 3-4 minutes until the frittata has set and the top is golden. Turn out onto a warmed plate and serve immediately with French bread and a green salad.
