2 lg Onions – chopped
1 Bell pepper – chopped
2 Ribs celery – chopped
1/4 c Parsley – chopped
2 Cloves garlic – finely
Chopped
Salt and pepper – to taste
pn Sugar
Bay leaf
2 lb Sausage links – your
Choice

Correro s Red Beans and Rice Preparation

Combine all except parsley and cook until beans are done. Serve over rice. Add parsley just before serving. Variation: Omit ham bone and sausage and use a center slice of ham, cut in small pieces.
