Cooking Ingredients for Country Brunch Casserole Recipe

6 Strips bacon
6 c Frozen cubed hash browns
1/2 c Onion; chopped
Salt and pepper
6 Eggs
1/2 c Shredded cheddar cheese

Country Brunch Casserole Preparation

In large skillet over medium heat, cook bacon until crisp. Remove, crumble and set aside. Leave 2 tablespoons of fat in skillet; add hash browns, onions, salt & pepper and fry for about 2 minutes. Cover and cook, stirring occasionally, until hash browns are tender and browned, about 15 minutes. Make 6 wells in potatoes; break one egg into each well.
