Cooking Ingredients for Cranberry Dumplings 2 Recipe

1/4 c Sifted flour; plus
1 tb Sifted flour
1-1/2 ts Baking powder
1/2 ts Nutmeg
1/4 ts Salt
1 c Sugar
1/4 c Milk
1 Egg
2 c Fresh cranberries
1/2 ts Vanilla
1 c Water

Cranberry Dumplings 2 Preparation

Preheat oven to 375 degrees. Meanwhile make the filling. In a saucepan place berries. In a bowl mix together 3/4 cup of the sugar and 1 tablespoon of flour and then sprinkle over the berries. Then add the water and vanilla and bring to a boil. Reduce heat just to keep the berries warm. Now make the dumplings. In a large bowl sift together remaining flour, baking powder, nutmeg and salt. Then add the remaining 1/4 cup of sugar. In another bowl mix together the milk and eggs and then add to the dry ingredients until just blended. Pour the mixture into an 8-inch square baking pan. Using a tablespoon, drop the cranberry mixture onto the batter. Place in the oven and bake for 25 to 30 minutes. This recipe yields 4 servings.
