3 c Broth; chicken or

2 tb Unsalted butter
1/2 ts Salt
1 c Stone-ground yellow corn
-meal; or instant polenta
2 tb Flat-leaf parsley; finely
-chopped
1 tb Fresh thyme; finely chopped
2 tb Fresh basil chiffonade
Freshly ground pepper
Creamy Polenta Preparation
Combine the stock, butter and salt in a heavy-bottomed saucepan and bring to a simmer. Slowly add the cornmeal in a thin stream, whisking constantly. Lower the heat and continue stirring with a wooden spoon until the mixture has thickened and leaves the side of the pan, approximately 20 minutes for cornmeal, 10 minutes for instant polenta.
