1/2 c Milk
1 Jar Chi-Chi s diced green

2 c Shredded Monterey Jack

1 pk Frozen chopped spinach – (10

1 cn Spam luncheon meat – (12
-oz); cubed
1/2 c Sliced green onion
8 Flour tortillas – (7 dia);
-softened

Creamy Spinach Enchiladas Preparation

Heat oven to 350 degrees. Combine sour cream, milk, green chilies, and 1 cup cheese. Combine spinach, Spam, and green onions. Add half of sour cream mixture to Spam mixture. Divide Spam mixture evenly among tortillas. Roll up tortillas; place seam-side down in lightly greased 13- by 9-inch baking pan. Pour remaining sour cream mixture over tortillas. Bake 25 minutes. Sprinkle with remaining 1 cup cheese. Bake 5 minutes longer. This recipe yields 4 servings.
