25 g Butter; (1oz)
1 tb Oil
2 md Sweet potatoes; peeled and
-sliced
2 tb Freshly chopped flat leaf
-parsley
3 tb Soured cream
1 ts Lemon juice
Salt and freshly ground
-black pepper

Creamy Sweet Potato And Parsley Mash Preparation

Preheat the oven to 200 C, 400 F, Gas Mark 6. Place the butter and oil in a roasting pan with the sweet potatoes and roast in the preheated oven for 35 minutes, until soft. Allow to cool slightly and place in a blender or food processor with most of the parsley, the soured cream, lemon juice and seasoning to taste.
