Cooking Ingredients for Creole Corn Recipe

2 sl Bacon
1 lg Onion; sliced,
Separated into rings
1 md Green pepper; chopped
-finely
2-1/2 c Chopped fresh tomatoes
1 sm Bay leaf
2 c Corn; cut from cob
1/4 ts Salt
1/8 ts Pepper

Creole Corn Preparation

Fry bacon until crisp. Remove from skillet, reserving drippings. Drain bacon & crumble. Add onion & pepper to drippings in skillet. Cook over medium heat, stirring constantly, until crisp-tender. Add tomatoes & bay leaf to onion mixture. Simmer 10 minutes, stirring occasionally. Stir in corn & simmer 10 minutes. Discar bay leaf. Stir in salt, pepper & bacon. Yields 6-8 servings.
