3 Sweet potatoes (about 2 1/2
-pounds)
1 Egg
1 Clove garlic, minced
1/2 c Dry bread crumbs
1/2 c Freshly grated Parmesan
-cheese
1 ts Each dried basil and oregano
Crispy Sweet Potato Wedges Preparation
Peel potatoes; cut each lengthwise into 8 wedges. In large bowl, whisk together egg, garlic and 1 tbsp. water. Add potatoes; toss to coat evenly. In shallow dish, combine bread crumbs, Parmesan cheese, basil and oregano; roll potato wedges in mixture to coat well. Bake on greased baking sheet in 425oF oven for 15 minutes.
