Cooking Ingredients for Cristina s Vegetarian Summer Pasta Recipe

1/2 c Olive oil
4 Smashed garlic cloves
1 Minced anchovy fillet
1 ts Red pepper flakes
2 14.5 oz. can whole; peeled
-tomatoes
1/4 ts Salt
1/2 c Sliced black olives
1/4 c Chopped parsley
1 lb Cooked penne pasta
1/2 c Crumbled feta cheese

Cristina s Vegetarian Summer Pasta Preparation

Directions: In a large saut‚ pan, heat the olive oil until hot. Add the garlic, anchovy and red pepper flakes and cook over medium heat, stirring often to blend flavors. Gently mash the tomatoes into bite-sized pieces. Add the tomatoes and salt to the oil mixture and allow to simmer for 30 minutes. Add the olives and parsley.
