Cooking Ingredients for Applesauce Fruitcake Recipe
1-1/2 c Sweetened applesauce
1/2 c Shortening
1 c Sugar
1 pk (8 ozs.) pitted dates;
-sliced
4 oz Chopped pecans
1/2 lb Red cherries; halved
1/2 lb Green cherries; halved
2 c Raisins
2-1/4 c All-purpose flour
2 ts Baking soda
1 tb Cinnamon
1/4 ts Allspice
1/2 ts Salt
Applesauce Fruitcake Preparation
Grease and flour a tube pan and set aside. Combine applesauce, shortening and sugar together in a saucepan. Bring to a boil; boil for 5 minutes, stirring occasionally. Combine fruit and nuts in a large bowl, adding flour, soda, salt and spices and stir together. Fold in cooked mixture until well moistened. Pour into the prepared pan and bake at 275 degrees for 2 hours or until done. Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
