Beat together eggs, oil, cream cheese and vanilla. Add flour, sugar, baking powder, cinnamon, soda and salt, and beat until well mixed. Add walnuts and carrots, and mix well. Pour batter into a greased and floured 9×13-inch pan, or into 2 9-inch round pans. Bake at 350 F for about 40-45 minutes (for 9×13 pan) or about 35-40 minutes (for 9-inch round pans).
