Cooking Ingredients for Eclairs Recipe

1 Box low-sodium club crackers
2 pk Small vanilla fat & sugar
-free pudding
3 c Skim milk
1 Container (8 oz.) lite Cool
-Whip (you could use fat
-free if you wanted)
1 Low fat milk chocolate
-frosting

Eclairs Preparation

Layer the bottom of a 9×13 pan with crackers, mix the pudding with skim milk, when pudding is thick, mix in the Cool Whip. Then put 1/2 the mixture over the crackers, then put more crackers over that mixture and put remaining mixture over crackers. Then frost another layer of crackers with frosting and put on top.
