Cooking Ingredients for Festive Tomatoes Recipe

1 bn Flat-leaf parsley
1 pk Fresh basil leaves
1 cl Garlic, minced
2 tb Pinenuts or walnuts
2 tb Olive or vegetable oil
2 tb Parmesan cheese, grated
2 tb Mayonnaise
4 lg Tomatoes, cut in 4 slices
16 Thin slices mozzarella
-cheese
8 sl Of cucumber, halved
8 Pitted black olives, halved
Parsley leaves, for garnish

Festive Tomatoes Preparation

Measure 1 cup of parsley leaves and reserve some for garnish. Combine with basil, garlic, nuts, oil, and Parmesan in a food processor or blender and blend until smooth. Blend in mayonnaise. Arrange the tomato slices on a plate. Top each with the parsley-basil mixture, sliced mozzarella, cucumber and olives. Garnish with the reserved parsley leaves.
