Reserved giblets
1 Clove garlic
1/2 Whole onion
1 Stalk celery; roughly
-chopped
1 Bay leaf
3 Peppercorns
Water to cover

Giblet Stock Preparation

In a medium saucepan combine all ingredients. Cover with the water. Bring to a boil. Then lower heat and simmer until giblets are cooked through, tender. Remove from heat and set aside.
