Cooking Ingredients for Greek Grainberry Salad Recipe

1 c Spelt berries
4 c Water
1/2 c Thinly sliced red onion
1/2 c Julienned seedless cucumber
1/2 c Julienned red pepper
2 tb Minced fresh dill
1 tb Minced fresh mint
1/4 c Extra virgin olive oil
3 tb Fresh lemon juice
1 Garlic clove; minced
1/2 c Crumbled feta cheese;
-(optional)
Salt and white pepper

Greek Grainberry Salad Preparation

6 servings 1. In a medium saucepan, combine spelt berries and water. Bring to a boil, then reduce heat and simmer for 1 hour, or until just render. Drain well and chill. 2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper, dill, mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if desired.
