Cooking Ingredients for Grilled Spam Ensalada Recipe

1 cn Spam luncheon meat – (12
-oz); cut into 1/2 strips
1 Onion; cut into wedges
3 Jalapeno peppers; chopped
2 c Sliced jicama
2 c Peeled; sliced tart apples
2 c Sliced zucchini
1/2 c Oil
2 tb Chi-Chi s hot salsa
1 tb Vinegar
1/2 ts Coarsely-ground black pepper

Grilled Spam Ensalada Preparation

In skillet over medium-high heat, cook Spam, onion, and jalapeno peppers 7 to 10 minutes or until browned. In bowl, combine jicama, apple and zucchini. In small bowl, whisk together oil, salsa, vinegar, and pepper. Pour dressing over jicama mixture; toss to combine. To serve, place vegetable mixture around warm Spam mixture. This recipe yields 4 servings.
