Preheat the grill until hot. Grill the halloumi for 3-4 minutes, turning half way through until golden brown. Grill the pitta bread until warm. Spill the pitta in half widthways then layer on the lettuce, halloumi and tomato. Sprinkle with a pinch of salt – not too much as halloumi is very salty.
