2 ts Canola oil
2 Cloves garlic; minced
1/2 c Cauliflower; diced
1/2 c Broccoli; diced
1/2 c Corn kernels
1 sm Carrot; diced
Salt and pepper; to taste
Red pepper flakes
1 ts Apple cider vinegar
1 ts Light soy sauce
Hearty Vegetable Filling for Tamales Preparation
Heat oil over medium flame in frying pan. Add garlic and vegetables; saute until tender-crisp, about 7 minutes. Add salt and both peppers; remove from heat. Stir in vinegar and soy sauce.
