Preheat oven to 450 degrees F. In 13 by 9 metal baking pan, arrange potatoes in single layer. Spray potatoes with olive-oil spray to coat; toss with salt, thyme, and pepper. Roast potatoes 20 to 25 minutes, turning once with metal spatula, until golden and fork-tender.
