1 c Hominy
1/2 ts Salt
1 tb Melted shortening
1 ts Baking powder
2 Eggs, well beaten
1 c Milk
1/2 c Corn-meal

Hominy Corn Bread 2 Preparation

Combine hominy, shortening, eggs, and milk. Add corn-meal, salt, and baking powder. Let stand 5 minutes. Add 1 tablespoon more of milk if desirable. Pour into well-oiled pan and bake in hot oven (425o F) 35 minutes or until a rich golden brown. 6 servings. Florence Taft Eaton, Concord, MA.
