2 c Corn meal
4 ts Baking powder
2 c Boiling water
1 c Sweet milk
1 ts Melted butter or bacon
-grease
1 ts Salt
2 Eggs

Hot Water Corn Meal Muffins Preparation

Sift corn meal & salt together & scald with the boiling water. Add cold milk to this mixture quickly & stir to keep the meal from lumping. Add eggs & beat well. Add baking powder when just ready to put in oven. Add butter last. Pour into well-greased muffin tins which have been heated in oven until almost smoking. Bake at 475 until well browned.
