Substitute 2 tsp. almond extract for the ginger. Roll each half of dough into eleven 1/2 thick ropes ranging in length from 4 to 14 . Form rings, on cookie sheets, by lightly pressing ends of each rope together. Bake 12-15 minutes. Drizzle cooled rings with plain Royal Icing. Stack to make 2 towers. Decorate.
