1 c Orange juice
1/2 c Lime juice
1/2 c Water
2 c Sugar
5 lg Ripe bananas, thinly sliced

Jamaican Banana Jam Preparation

Yields enough to fill six 8-ounce jars. 1. In a large, heavy saucepan combine all ingredients, except bananas, and bring to a boil over medium heat. 2. Add bananas and lower heat to a simmer, stirring regularly until mixture is thick. 3. Ladle into hot, sterilized jars and seal immediately according to instructions accompanying your particular type of canning jars. Recipe is from _The Banana Lover”s Cookbook_ by Carol Lindquist.
