Cooking Ingredients for Baked Cod and Vegetables Recipe
4 6-ounce cod fillets
1 lg Tomato; sliced
1 md Cucumber; sliced
1 tb Plus 1 tsp. olive oil
1/3 c Onion; chopped
1 Clove garlic; minced
1/2 Green bell pepper; chopped
2 tb Parsley; chopped
1/2 ts Marjoram; or 1 Tbs. fresh,
-chopped
Baked Cod and Vegetables Preparation
Prep: 10 min, Cook: 25 min. Preheat oven to 375oF. Arrange fish fillets in an oiled baking dish. Arrange tomato and cucumber slices over each fillet. Heat oil in a heavy saucepan over medium heat. Saut‚ onion, garlic and bell pepper until onion is tender. Do not brown. Remove from heat. Stir in remaining ingredients. Spoon mixture over fillets.
