1 Red pepper; deseeded and

1/2 Red onion; chopped

Baked Eggs with Herby Bread Preparation

Preheat the oven to 200c/400f. 1 Cut the bread slices in half into triangles. Crush the garlic with the salt. Place in a large dish with 2 tbsp olive oil, parsley and chives. 2 Dip the bread in the mixture, and bake in the oven until golden. Heat the remaining olive oil in a saute pan, and add the pepper and onion. When soft, add the tomatoes.
