1-1/2 lb Thin leeks
2 tb Olive oil
1 Bay leaf
1 ts Whole coriander seed
6 Peppercorns
Salt
5 fl White or red wine
Chopped parsley
Leeks Cooked in Spiced Wine Preparation
1. Clean and trim the leeks and cut them into 5cm / 2in lengths. Heat the oil in a large saucepan and add the leeks: stir-fry gently for about 5 minutes, then add the bay leaf and spices, a little salt and the wine. 2. Cover and let the leeks simmer gently for 15-20 minutes, until tender.
