2 Fresh or frozen whole trout;
-gutted, defrosted
; if frozen
25 g Butter; (1oz)
1/2 Lemon; grated rind and

1 tb Freshly chopped flat leaf
-parsley and

Salt and freshly ground

25 g Flaked almonds; (1oz)
1 Sprig flat leaf parsley and
-watercress and
; lemon wedges to garnish
Lemon And Herb Grilled Trout Preparation
1. Make three slits on each side of the trout and place on a grill pan. 2. Mix together the butter, lemon rind, lemon juice, parsley and seasoning. Dot half over the trout. Place under a preheated moderate grill for 12-15 minutes, turning the trout once and dotting with the remaining butter during cooking. 3. Sprinkle the almonds over the trout and return to the grill for 1-2 minutes until browned. Serve immediately garnished with parsley sprigs and lemon wedges. Converted by MC_Buster.
