1 Lemon; (unwaxed)
2 tb Brandy
5 tb Sweet sherry
85 g Caster sugar
300 ml Double cream
Mint sprigs; to decorate
1 Thin; crisp biscuits, to

Lemon Syllabub Preparation
1 Grate the rind from the lemon and set aside. Cut the lemon in half and squeeze out the juice. Place in a large bowl and pour in the brandy and sherry. Add the sugar and stir until dissolved. 2 Switch on an electric beater and begin whisking on a low speed whilst pouring in the cream in a thin steady stream.
