1/4 c Fresh lemon juice
2 ts Dijon mustard
2 tb Minced fresh parsley
1 ts Minced fresh tarragon or 1/4

1/2 ts Minced garlic
1 md Red bell pepper; chopped
1 Stalk celery; chopped
1 md Tart apple
Such as Granny Smith; peeled

1 md Carrot; peeled and shredded
1 c Chopped green or red cabbage

Lemon-Tarragon Vegetable Salad Preparation
6 SERVINGS VEGAN In medium bowl, combine oil, lemon juice, mustard, parsley, tarragon and garlic. Add bell pepper, celery, apple, carrot and cabbage and toss well.
