Cooking Ingredients for Lunar Landing Salad Recipe
1-1/2 lb (4 medium) potatoes; cut
-into 1/2-inch dice
1/2 c Sliced radishes
1/2 c Diced cucumber
1/3 c Sliced green onions
1-1/2 tb Vegetable oil
2 tb White wine vinegar
1/2 c Blue cheese; crumbled
Salt; to taste
Black pepper;Coarsely
-ground, to taste
Lunar Landing Salad Preparation
Place potatoes in shallow 1 1/2-quart microwave-safe dish, cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until tender; coll slightly. In large bowl toss potatoes, radishes, cucumber, onions and oil. Drizzle with vinegar and cheese; toss again. Season with salt and pepper. Makes 4 servings Note: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven.
