4 White or golden beets
– cooked, peeled & chopped
1 ts Chopped lovage or parsley
2 tb Balsamic vinegar
5 tb Olive oil
2 Eggs, hard-boiled
1/2 c Home made croutons

Mache and Beet Salad Preparation
