4 c Lowfat plain yogurt -; (1

Martha Stewart s Yogurt Cheese Preparation

Dampen and wring out the cheesecloth, then lay it over the mixing bowl. Spoon the yogurt into the center of the cheesecloth. Tie the corners of the cheesecloth around a wooden spoon, and rest the spoon across the bowl, suspending the yogurt over the bottom of the bowl. Cover the bowl with plastic wrap, and refrigerate for 8 to 12 hours. Remove the yogurt from the cheesecloth, and serve, seasoned with herbs or flavored with honey, if desired. Makes about 1 2/3 cups.
