4 lg Potatoes
2 fl Cream
1 oz Butter
1 lg Onion finely chopped
2 tb Olive oil
Mashed Potatoes with Browned Onions Preparation
Butter the casserole dish. Cut the potatoes into quarters and place in a pan of boiling salted water. Cook for about 15mins until tender. Drain then return to the pan and mash with vream and butter. Fry the onion until golden brown. Stir the onions into the mashed potatoes and spoon into the casserole dish.
