Cooking Ingredients for Vodka-Spiked Gazpacho Recipe
2 lb Ripe tomatoes; cored and
-chopped
2 Ths red-wine vinegar
1 sm Red onion; chopped
2 Scallions; chopped
1 Hot or mild green chill;
-chopped
2 Garlic cloves; finely minced
1 sm Cucumber; chopped
1/4 c Chopped coriander leaves
2 tb Chopped fresh basil leaves
1 Lime; juice of
1/4 c Olive oil
1/4 c Vodka*
Salt; freshly ground pepper,
-to taste
1 Ripe avocado; sliced
Sour cream; optional
Croutons; optional
Vodka-Spiked Gazpacho Preparation
In a large serving bowl, combine all ir gredients except avocado, sour crear and croutons. Adjust seasonings to taste.
