Cooking Ingredients for Wicked Mushrooms Recipe

1-1/2 lb Mushrooms – quartered
1 md Green pepper – cut in
Chunks
2 Bay leaves
1 tb Low sodium tamari
1/4 c Tomato paste
1 tb Parsley flakes
1 md Onion – chopped
2 c – water
1/4 ts Thyme
1 c Burgundy wine
Fresh ground black pepper

Wicked Mushrooms Preparation

Put 1/2 cup water in a large cooking pot. Add the chopped onion, bay leaves and thyme. Saute about 5 minutes. Add chopped green pepper and mushrooms. Continue cooking about 10 minutes. Add the remaining water, tamari, wine, tomato paste, and parsley. Add a little fresh ground pepper, if desired. Simmer slowly over low heat for at least 60 minutes, until the liquid becomes a thick sauce. Remove bay leaves. Serve very hot over brown rice or pasta.
