3 T Vegetable oil
1 Onion, chopped
1/2 Garlic clove, chopped
1 Banana
1 t Curry powder
1 c Vegetable broth
150 g Rice
1 Bell pepper
1 Basil leaf
20 Small mushrooms
Banana Rice with Vegetable Kebabs Preparation
Heat oil in skillet and brown onion, garlic, mashed banana and curry powder. Add broth. Pre-cook rice, then add to skillet. Cut bell pepper in 1×1 inch Pieces. Put alternating bell pepper pieces and mushrooms on skewer (Roughly 10 mushrooms and 10 bell pepper pieces per skewer). Transfer skewers to clean skillet and brown for approx. 4 minutes.
