Cooking Ingredients for Mixed Fruit Squares Recipe
1 pk (8-oz) dried mixed fruit;
-finely chopped
1/4 c Dark raisins
1-1/4 c Water
8 tb Margarine; cut into pieces
2 Eggs
1 ts Vanilla
1 c All-purpose flour
5-1/2 ts Equal Measure -or-
18 Packets Equal sweetener
1 ts Baking soda
1/4 ts Salt
3/4 ts Ground cinnamon
1/2 ts Ground ginger
1/4 ts Ground nutmeg
1/4 c Chopped walnuts
Mixed Fruit Squares Preparation
Combine dried fruit, raisins and water in medium saucepan; heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed, about 10 minutes. Remove from heat and add margarine, stirring until melted; cool to room temperature. Mix eggs and vanilla into fruit mixture; mix in combined flour, Equal Measure, baking soda, salt and spices. Spread batter evenly in greased baking dish, 11x7x2-inches; sprinkle with walnuts. Bake in preheated 350o oven until cake springs back when touched lightly, 30-35 minutes. Cool on wire rack; cut into 1-inch squares. Makes approx. 2 dozen, 18% calorie reduction from traditional recipe.
