1 Green pepper; seeded and
-diced
1 Serrano chili; seeded and
-minced
2 ts Vegetable oil
1 15 oz can chopped tomatoes;
-with juices
1 15 oz can kidney beans;
-rinsed & drained
1 15 oz can white hominy;
-rinsed & drained
2 tb Prepared mole sauce
1 c Water
Mole Posole 2 Preparation
In soup pot, saute onion, peppers, and chili in oil over medium-high heat until onion is soft, about 4-5 minutes. Add remaining ingredients. Bring to a boil.
