1-1/2 c Coarsely ground, roasted
-almonds
1 c Sugar
pn Salt
1/4 c Unsweetened cocoa
Matzo meal
1 Grated rind of orange
1/2 ts Almond extract
1 Egg, lightly beaten
1 Egg yolk, lightly beaten
Moscardini De Pesach Preparation
Preheat oven to 350”F. Combine almonds, sugar, salt, cocoa, 1 cup matzo meal, orange rind, almonds extract, egg and egg yolk in a small bowl. Drop dough by rounded teaspoonfuls on oiled baking sheet dusted with matzo meal. Shape each cookie into a oval, flatten with bakc of fork. Bake for 10 minutes. Cool on rack.
