Cooking Ingredients for Mozarella, Zucchini and Anchovy Toasts Recipe
1 tb Olive oil
4 sm Zucchini, trimmed and sliced
2 tb Parsley, finely chopped
4 sl (large) fresh Italian
-country bread, 3/4 inch
-thick
12 sl Mozzarella cheese
8 Anchovy fillets, drained and
-chopped
Mozarella, Zucchini and Anchovy Toasts Preparation
Preheat oven to 400F. Heat olive oil in large skillet over med-high heat. Add zucchini and parsley and saute” until zucchini is tender, about 5 min. Remove from heat. Place bread slices on large baking sheet. Bake until crisp, about 10 min. Arrange 3 slices mozzarella on each bread slice. Top with zucchini, dividing equally. Sprinkle with anchovies.
