Here”s a recipe from The Diabetic Gourmet your husband might like. Cut pork into bite-size pieces. Combine ingredients in plastic bag and marinate 1 to 2 hours. Remove meat from bag and discard marinade. Put meat on small rack or skewers and bake at 325 degrees for 1 hour. Serves 4.
