1-1/2 c Barley; uncooked
8 c Water
1/3 c Fresh parsley; chopped
2 tb Basil
1/4 c Green onions; sliced
1/4 c Lemon juice
1/4 c Canola oil
1 ts Soy sauce
2 Tomatoes; diced

Barley and Tomato Salad Preparation

1. In a sauce pan, boil barley in water for 15 minutes; drain. Return to pot, replace lid and steam barley for 10 minutes more; cool. 2. Add parsley, basil, and green onions; let sit to blend flavours. 3. In a small bowl beat together, lemon juice, oil and soy sauce; add tomatoes; toss with barley mixture. 4.
