Pinch dried sage or marjoram
8 oz Pork fat, without gristle
1 oz White breadcrumbs (optional)
1/2 ts Ground allspice
Ground ginger, mace, nutmeg
1 ts Salt
Cloves, cayenne pepper
Fresh-ground pepper
