Salt; to taste

Uppu Elimachangai (Salty Lemon Pickle) Preparation

Cut lemons into 2 cm. pieces. Chop chillies fine. Mix together lemons, ginger, chilies and salt well in a pickle jar. Allow to stand for about 3 days and then use. Refrigerate.
