1 c Orzo pasta
1-1/4 ts Olive oil
3/4 md Onion; minced
7 oz Frozen chopped spinach;
-thawed and well drained
2 tb Feta cheese; plus 2 tsp.
-,crumbled
Freshly ground black pepper;
-to taste

Orzo with Spinach and Feta Cheese Preparation

Cook the orzo according to package directions. Drain. Heat the oil in a skillet over medium high heat. Add the onion and saut‚ for 5 minutes. Add the spinach and saut‚ for 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add the feta cheese and ground pepper and toss well. Serve immediately.
