Cooking Ingredients for Ostrich Sausage Recipe

5 Feet small hog casings
4 lb Ostrich meat
2 ts Salt
1 ts Freshly ground white pepper
-* plus cayenne or Hab
-powder to kick it up a
-little
1 ts Celery seed
1/2 ts Powdered bay leaf
2 ts Lemon zest
2 tb Fresh chopped parsley
1/8 ts Ground cloves
1/4 c Wild turkey bourbon;
-(optional)

Ostrich Sausage Preparation
