3/4 c Tightly-packed basil leaves
3 tb Lightly-toasted pine nuts
1 tb Roasted Garlic; see * Note
1/2 c Olive oil
Kosher salt; to taste
Freshly ground black pepper;

Basil-Mint Pesto Preparation

* Note : see the Roasted Garlic recipe which is included in this collection. In a blender or food processor, combine the mint, basil, pinenuts, and Roasted Garlic. With the machine running, slowly add the olive oil to make a smooth paste. Season to taste with salt and pepper.
